Careful elimination of the stalk, the whole berries are sent to small stainless steel tanks.
Alcoholic fermentation of the two varieties of grape that intervene in this process is done by separate. Adding of selected yeasts, temperature control between 28 and 30 ºC.
Maceration time with residue: 30 days.
Placed in French oak barrels for 16 months.
Alcohol: 14,30%.
Sugar: 2,10 gr/lt.
Total acidity: 5,20 gr/lt.
pH: 3,72.
Important red color, shiny and profound.
Traditional French blend full of fruits, spicy and caramelized. Elegant, fleshy, noble tannins, concentrated and distinguished character.
